Ingredients
Large head of romaine
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn (I used frozen, thawed)
5 green onions
Creamy Cilantro-Lime Dressing* or other dressing of choice
Directions
Finely chop romaine, bell pepper, tomatoes, and green onions.
Place all ingredients in a large bowl and mix to combine.
Toss with desired dressing.

2 Tbsp. fresh lime juice (about 1/2 lime)
1-2 garlic cloves

Puree all ingredients in a blender or food processor until smooth.
Taste and adjust seasonings if necessary.

Useful Information!
COFFEE FILTERS
Coffee filters .... Who knew! And you can buy 1,000 at the Dollar Tree for almost nothing even the large ones.
1. Cover bowls or dishes when cooking in the microwave. Coffee filters make excellent covers.
2. Clean windows, mirrors, and chrome... Coffee filters are lint-free so they'll leave windows sparkling.
3. Protect China by separating your good dishes with a coffee filter between each dish.
4. Filter broken cork from wine. If you break the cork when opening a wine bottle, filter the wine through a coffee filter.
5. Protect a cast-iron skillet. Place a coffee filter in the skillet to absorb moisture and prevent rust.
6. Apply shoe polish. Ball up a lint-free coffee filter.
7. Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter.
8. Weigh chopped foods. Place chopped ingredients in a coffee filter on a kitchen scale.
9. Hold tacos. Coffee filters make convenient wrappers for messy foods.
10. Stop the soil from leaking out of a plant pot. Line a plant pot with a coffee filter to prevent the soil from going through the drainage holes.
11.. Prevent a Popsicle from dripping. Poke one or two holes as needed in a coffee filter.
12. Do you think we used expensive strips to wax eyebrows? Use strips of coffee filters..
13. Put a few in a plate and put your fried bacon, French fries, chicken fingers, etc on them. It soaks out all the grease.
14. Keep in the bathroom. They make great "razor nick fixers."
15. As a sewing backing. Use a filter as an easy-to-tear backing for embroidering or appliqueing soft fabrics.
16. Put baking soda into a coffee filter and insert into shoes or a closet to absorb or prevent odors.
17. Use them to strain soup stock and to tie fresh herbs in to put in soups and stews.
18. Use a coffee filter to prevent spilling when you add fluids to your car.
19. Use them as a spoon rest while cooking and clean up small counter spills.
20. Can use to hold dry ingredients when baking or when cutting a piece of fruit or veggies.. Saves on having extra bowls to wash.
21. Use them to wrap Christmas ornaments for storage.
22. Use them to remove fingernail polish when out of cotton balls.
23. Use them to sprout seeds.. Simply dampen the coffee filter, place seeds inside, fold it and place it into a plastic baggie until they sprout.
24. Use coffee filters as blotting paper for pressed flowers. Place the flowers between two coffee filters and put the coffee filters in phone book..
25. Use as a disposable "snack bowl" for popcorn, chips, etc.
Chicken Parmesan!
Chicken Parmesan Meatloaf Muffins
Ingredients:
1 ½ lbs raw ground chicken breast (if you have trouble finding ground chicken that is breast meat only, do what I do and throw the same weight of boneless, skinless chicken breasts into the food processor and run until ground)
1 large egg
1 egg whites
6 T dried breadcrumbs
¾ t dried basil
¾ t dried thyme
¾ t oregano
2 garlic cloves, minced
½ a small onion, chopped small or grated
¾ t salt
1/3 t black pepper
¾ cup Parmesan cheese
¾ cup pasta sauce
¾ cup 2% reduced fat shredded Mozzarella cheese
Optional: dried parsley, oregano or basil for garnish
Directions:
1. Pre-heat the oven to 350. Lightly mist a muffin tin with cooking spray and set aside.
2. In a large bowl, combine the ground chicken, egg, egg whites, breadcrumbs, basil, thyme, oregano, garlic, onion, salt, pepper and Parmesan cheese and lightly mix together. Do not over handle.
3. Form the meat mixture evenly into the 12 cups of your prepared muffin tin. Spread the pasta sauce evenly over the tops of each muffin. Bake for 20 minutes and remove from the oven. Top each muffin with about a tablespoon of shredded cheese and then return to the oven for 2-3 minutes until the cheese is melted. Garnish if desired.
Yields 12 muffins. WW P+: 4 per muffin or 7 P+ for 2 muffins (P+ calculated using the recipe builder on weightwatchers.com)

Linda's Low Carb CHILE RELLENO CASSEROLE

Introduction
This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper.

Ingredients
1lb lean hamburger
2 7-ounce cans whole green chiles, drained well *
8 ounces pepper-jack cheese, shredded
3 eggs
3/4 cup heavy cream
1/2 teaspoon salt
4 ounces cheddar cheese, shredded
Directions
Grease an 8x8" baking pan. Slice each chile along one long side and open flat. Brown burger--mix with half of the chiles in the bottom of the baking pan, Top with the pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up. Beat the eggs, cream and salt well. Pour evenly over the chiles. Top with the cheddar cheese. Bake at 350º for 35 minutes, until golden brown. Let stand 10 minutes before cutting.
Makes 6-9 servings

Homemade Pam!
HOMEMADE COOKING SPRAY
Ingredients
1 part olive oil (or your choice of oil)
5 parts water
1 misting spray bottle
Instructions
Mix in your spray bottle 1 part olive oil to 5 parts water. In my 12 ounce bottle, I poured in 2 ounces of canola oil and added 10 ounces of water. Shake well and you’re done. That’s it. Store in a cool, dark place.

Garlic Prawns!
Peppery Garlic Prawns Recipe
Menu suggestion: I would use brown rice (be sure to drizzle extra sauce from the pan over the rice), snow peas or sugar snap peas, and some french bread to soak up the garlic sauce. If you don't like the strong black pepper taste, you can back off a bit and it's still great.

INGREDIENTS
4 cloves garlic, crushed
1/2 teaspoon salt
1 teaspoon crushed black peppercorns*
1 teaspoon fresh lemon juice
2 Tbsp brandy
1 lb. raw medium-sized shrimp, shelled, de-veined and split (tails on or off)**
1-2 Tbsp olive oil
2 Tbsp fresh chopped parsley
*Crushing the peppercorns can be done with a mortar and pestle. Or if you don't have a mortar and pestle, place the whole peppercorns in a small Ziplock bag and place that bag inside another Ziplock bag and smash with a hammer. Do this on a hard surface, if done on a wood surface, it can leave dents. The Ziplock will also tear a bit, so take care not to lose the crushed pepper (why you double bag it).
** Trader Joe's has great frozen uncooked, shrimp, shelled and de-veined with tails on. To defrost frozen shrimp, place in a bowl of ice water in the refrigerator.
METHOD
1 Mix together the crushed garlic, salt, crushed peppercorns, lemon juice and brandy. Add the shrimp and marinate at least an hour or up to overnight in the fridge.
2 Heat a heavy skillet over medium high heat and add olive oil. Add shrimp and garlic mixture and cook quickly, tossing shrimp. The longer the shrimp has been marinating, the less time it takes to cook. Cook until the shrimp has turned opaque (generally only 2-3 minutes).
Garnish with chopped parsley.
Yield: Serves 2-3 as a main dish, 4 as an appetizer.

Chicken Ranch Tacos:
3 cups cooked chicken, cut up
1 pkt. taco seasoning (chicken or beef)
1/2 cup Ranch dressing
------------------
taco shells
lettuce
cheese
Ranch dressing
tomatoes
etc...
Heat a skillet over med-high heat. Add chicken & warm it for a few minutes. Sprinkle on the dry taco seasoning. Do not add any water! Heat for 5-7 minuted until all heated through & powder is stuck to the chicken.
Add Ranch dressing, heat an additional 2-3 minutes to warm through.
Serve in taco shells with all the fixings you love - plus an extra squirt of Ranch!

Cheesecake Stuffed Strawberries! Really easy and so delicious!

These are truly so delicious! I whipped these up the other day for my family for dessert and they were gone so fast! I was lucky I even got to taste one!
Buy the biggest strawberries you can find so you can pack in lots of cheesecake…
Before you dip the bottoms in white chocolate, make sure you dab the strawberries on a paper towel to make sure they are dry. If moisture gets into the chocolate it will seize up! If you have extra cheesecake filling left over, just pipe it onto a graham cracker or vanilla wafer cookie and store it in the fridge!
Note: You do not have to add the white chocolate to the bottom of the strawberries… they will stand up just fine without it.

Ingredients
- 1 Pint of Strawberries (or more… there will be cheesecake filling leftover but the size of the strawberries will determine how many you can fill)
- 2 oz White chocolate
- Sprinkles (optional)
- Graham crumbs
- 1 8 oz Package of Cream Cheese, softened
- 3 tablespoons of sugar
- 1 teaspoon of lemon juice
- rind from 1 lemon (optional)
- 1 cup Cool Whip or dessert topping
Cheesecake Filling
Instructions
- Wash strawberries and dry well.
- Cut the tops off the strawberries and hollow them out using a small spoon or astrawberry huller (this is the one I use, works for tomatoes and strawberries)
- Place the chocolate in a small dish and melt on 50% power for about 15 seconds.. continue in 10 second increments until the chocolate is melted
- Slice a thin piece of the bottom of each strawberry so it can stand up and pat it dry with a paper towel. Dip the bottom of each strawberry into chocolate and place on a parchment lined plate or pan. Refrigerate 5 minutes.
- Meanwhile, in a small bowl mix together the cream cheese, sugar, lemon juice and lemon rind if using. Fold in the Cool Whip.
- Place the cream cheese mixture in a decorator or into a Ziploc bag. If using a Ziploc bag, snip off a corner.
- Pipe the cream cheese into each strawberry… don't be afraid to overfill it a bit!
- Sprinkle graham crumbs on top and refrigerate until serving.

Cheesy Baked Tomatoes
What you need:
4 tomatoes, halved
1/4 cup freshly grated Parmesan cheese
1 oz reduced fat provolone cheese, shredded
1 tsp chopped fresh basil
1 tsp chopped fresh oregano
1/2 tsp salt
Freshly ground pepper, to taste
How you make it:
Preheat oven to 450° F.
Place tomatoes cut-side up on a baking sheet.
Top with Parmesan, provolone, oregano, basil, salt and pepper.
Mist lightly with non-fat cooking spray and bake until the tomatoes are tender, about 15 minutes.

For the meatballs:
1 lb. ground chuck
3/4 cup long grain rice, uncooked
1/4 cup tomato sauce
2 cloves garlic, crushed
1 medium sized onion, finely diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon basil
For the sauce:
2 cups beef stock
1 cup Ragu Chunky Tomato Onion Garlic Pasta Sauce
1 can condensed tomato soup
1/2 cup tomato puree
Preheat oven to 350 degrees. Mix all your meatball ingredients together and form into meatballs. Set aside. Mix all of your sauce ingredients together and pour half into a 13 x 9 inch glass baking dish. Place the meatballs into the dish and top with remaining sauce. Cover tightly with foil and bake at 350 for approximately one hour.
At 30 minutes, take baste the meatballs with your sauce and flip the balls over to cook them evenly. Serve over pasta or rice.
